If you’re a Southern girl like me or if you just appreciate great Southern food you know exactly how crazy good cheese straws are. Salty, Cheesy, Buttery, Airy, Crispy mouthful of goodness. Need I say more? Making a gluten and grain free version of this Southern Classic as easy as pie.
Often times in life we are blessed with the help from others. With our fitness transformation so many people have helped us along the way starting from our son introducing us to CrossFit and Paleo nutrition to coaches who have imparted tremendous amount of knowledge and inspiration to friends who have cheered us on and supported our efforts. None of us in this life do it all by ourselves. By helping a friend get a head start on a 30 Day Paleo/Sugar Detox Challenge and by showing how to plan a menu and by providing recipes my greatest hope is that he will be successful and achieve his goals. To be able to do this has actually been a blessing for me. It has given me the opportunity to share my passion for health and fitness with a friend.
I have thought for a long time about writing this piece. It might seem a little weird for a wife to write something like this about her husband. But that is how I see him, a hero; my hero. The word hero can mean many different things to many people. In the regular use of the word it usually means someone who has done something heroic, risking their life to save another life. But it can also mean someone who courageously overcomes great obstacles; never giving up or giving into the pain to achieve a goal.
Every once in a while you get lucky and an experiment turns out better than you expected. Guess what you can make with our Pizza & Flat Bread Mix. Amazing pie crust, that’s what. A couple of days ago I got a craving for a peach pie so I used the pizza crust mix. The preparation is a little different but I’m here to tell you that it turned out to be the flakiest lightest crust I have ever had. You would be hard pressed to know that it was not made with regular flour.
My all-time go to meal for warmth and comfort was a traditional Chicken & Dumplings. The sight and smell of a steaming bowl of goodness just warms my heart. But alas the traditional version is not exactly Paleo compliant and in fact it’s downright counter Paleo. What’s a good Paleo girl to do? Again; it’s cauliflower to the rescue.
With the weather so cold and overcast, I decided we needed to spice things up with a taste of warmer climates! Here is a recipe for a seriously delicious Pina Colada Carrot Cake that I made with our Nourishe Cinnamon Raisin Pecan mix. It's really, really easy. You can also use any carrot cake recipe you like. The unique thing about this cake is the frosting. - Della
