"Ack! It's 10pm and I haven't made lunches for the kids to take tomorrow. If I let them buy lunch it will be cheeseburgers and potato chips!" This is what my sister, Tammy, was saying last night as we realized time had gotten away from us and nothing kid-lunch friendly was prepared for the week. Has this ever happened to you?
My sister is trying to take her kids Paleo and school lunches have been her biggest challenge, especially since the kids don't have access to a microwave at school. Dinner leftovers don't always work as cold entrees the next day.
Her kids are older, which is good because they can understand why she is makes changes to their diet, but like any of us they are tempted by the less good-for-you options when they aren't armed with good looking and tasting food. So, what did we do? We improvised! Well, she improvised while I taste tested.
Here is a super easy, throw-it-all-in-a-bowl recipe that turned out crazy good for the amount of work and chock full of nutrition, protein and good fats. If you have pre-cut veggies on hand, like we did, this comes together in about five minutes. And if your kids don't like raisins, just substitute another fruit they do like!
Ham & Raisin Broccoli Slaw
- 12 oz bag broccoli florets
- 12 oz bag broccoli slaw
- 2 cups shredded carrots
- 1 cup raisins (or substitute another fruit if raisins are a no-go)
- 1 cup sunflower seeds 1 lb nitrate-free ham, cubed
- 1 cup Paleo-friendly mayonnaise
- 3 tbsp apple cider vinegar
- Salt & pepper to taste
Combine broccoli, slaw, carrots, raisins, sunflower seeds and ham in a very large bowl. Broccoli florets may need to be chopped a bit smaller to be bite sized. Mix mayonnaise and vinegar in a separate bowl. Pour dressing over the slaw mixture and stir until combined well and dressing is evenly distributed. Add salt and pepper to taste.
That's it! Round out lunch with some apples and almond butter, or some beef jerky and macadamia nuts and you've got a super quick lunch that is sure to please both kids and adults!
