Here is one of our favorite quintessential summer recipes that takes advantage of watermelon being in season and is sure to impress even the most sophisticated grilling crowd! It uses flank steak, a lean cut of beef that is also more economical and perfect for feeding a crowd. In this dish, the flank steak shines and is amazingly flavorful with cumin and garlic rubbed all over the outside. On top is a mango watermelon chutney that is sweet, spicy and tart all at the same time! It may sound like an usual combination of ingredients, but trust us, it is awesome.

This dish does contain some coconut sugar and quite a bit of fruit, so if you are trying to get lean, consider this a treat or dig in after a good workout. Nutritionally, mangoes and watermelon both contain great antioxidants. The steak rub can also be used without the chutney topping for a flank steak that is still super easy and out of this world good!

Cumin Garlic Flank Steak with Mango Watermelon Chutney

Steak & Rub:

  • 1 (1 1/2-pound) flank steak, trimmed
  • 1 tablespoon coconut sugar
  • 1 teaspoon salt
  • 3/4 teaspoon ground cumin
  • 3 garlic cloves, minced

Chutney:

  • 2 peeled ripe mangoes, each cut into halves (leave in large pieces to grill)
  • 1 teaspoon coconut oil
  • 1 cup thinly vertically sliced red onion
  • 1 tablespoon minced peeled fresh ginger
  • 1/3 cup cider vinegar
  • 2 tablespoons coconut sugar
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 cups finely diced seedless watermelon
  • 1 1/2 tablespoons chopped fresh cilantro
  • 1 1/2 tablespoons chopped fresh mint
  • Mint sprigs (optional)
  • Lime wedges (optional)



Preparation

  1. Prepare grill and set at medium.
  2. To prepare steak, combine first 4 ingredients. Sprinkle steak evenly with rub mixture. Place steak on grill rack; grill for 4-6 minutes on each side or until your desired degree of doneness. Let stand 10 minutes. Cut steak diagonally across grain into thin slices.
  3. To prepare chutney, place mango on grill rack brushed with coconut oil; grill 4 minutes on each side. Cool and chop. Set aside.
  4. Heat oil in a small saucepan over medium-high heat. Add onion; sauté 4 minutes. Add ginger; sauté 1 minute. Add vinegar, 2 tablespoons coconut sugar, juice, 1/4 teaspoon salt, and pepper; cook 5 minutes or until liquid almost evaporates. Stir in mango; cook 1 minute. Remove from heat. Stir in watermelon, cilantro, and mint. Add mint sprigs and lime wedges, if desired
  5. Serve to rave reviews!
